Chicken Quesadilla

So occasionally I like something simple & quick for dinner (Well all the time but doesn't happen all the time) especially after a day on the go.  One of my favorites is Chicken Quesadilla it is so easy & super quick.  There is no recipe for these.  You can be as creative as you want.  I like them simple with Tortilla shells, Taco cheese & chicken.
Ingredients
 I use a griddle to cook them on because of more room & the ability to push them aside to continue to heat while I cook another one.  First put the tortilla shell down & give it a minute to heat.
The add the cheese. (My husband LOVES cheese so there is usually a lot on his)
 
Let the cheese begin to melt.
 Then add the chicken.
 Fold in half, push to side and start another.
 Cut & serve.  We usually use taco sauce & sour cream to dip them in.  You can add anything you want to them so be creative.  I hope you enjoy.

My Favorite Meal... Chicken Lasagna...

So those who know me know that one of my favorite meals is Stouffers Chicken Lasagna. So when I came across this recipe I just knew I had to try it. So I actually took pics of the process which my husband was not happy with (it lengthens the dinner cooking process). But either way this meal was so awesome. The link for the recipe is at the bottom.
 The ingredients needed. (You actually only need 6 Lasagna Noodles. I refrigerate the rest) 

 Combine cottage cheese & cream cheese in a small bowl.

 This is what it will look like after mixed.
 Combine Chicken , soups, onions, salt & milk

 Spread half the chicken mixture on bottom of 9 x 13 pan
 Next layer is 3 noodles
 Then half the cheese combination.  Then repeat chicken, noodles & cheeses.
 Then combine melted butter & stuffing
 Sprinkle over top of layers
Finally product after cooking @ 350 for 30 - 40 mins.

The only thing I might change is next time I will add a can of drained mixed vegetable. But even without it I LOVED it.

New to Blogging

Well hello and welcome to my blog.  This blog is about me and my family, which consist of me, my husband and all my animals.  So let me tell you a little about our house.  I am 34 and my husband is 35 we meet in high school and married shortly after, which means we have been married 16 1/2 years.  We currently don't have any children of our own but we do have 17 nieces and nephews.  We do have a LOT of animals.  All small and mostly caged.  They are as follows 4 dogs, a cat, 4 different lizards (no an iguana is not one of them), a sulcata tortoise, 4 water turtles, a chinchilla, a sugar glider, 2 birds and a lot of fish (too many to count).  I will probably talk a lot about some of my nieces and nephews as well as my animals. I will share some of my recipes probably not all of them (a few I don't share, sorry). I love to bake but hate to cook which is weird because I am always looking for new recipes to use. Mostly because I always want to try something new.

I can't wait to get started have been wanting to do this for a while.  So bare with me if this blog sometimes seems to be off track.  It is mostly a place for me to share.  

For example tonight's dinner was Baked Spaghetti here is a picture of it.
As you can tell my husband LOVES cheese. I will share the steps and recipe next time I make it.
